How to make bakery style Jumbo Chocolate Chip Muffins. This recipe yields 5 jumbo muffins OR 12 regular sized muffins. Here&what you&need: 1 cup sugar (200g) ½ cup melted butter (125ml) ¼ cup vegetable oil (55ml) 2 large eggs (room temp) 1 cup milk, at room temperature 2 tsp vanilla (10ml) 2 and ½ cup all purpose flour. (310g) 1 tbsp baking powder 1 tsp baking soda 1/2 tsp salt 1 and a half cup of of semi sweet chocolate chips (minis) 1. Preheat oven at 205℃ or 400℉. 2. In a large mixing bowl, mix together butter and sugar until fully combined, about 2 minutes. 3. Add eggs, milk and vanilla. Mix well. 4. Sift in all purpose flour, baking powder, baking soda and salt. Mix just to combine. Do not over mix. 5. Add semi sweet chocolate chip minis. Mix 6. Cover with cling film then. Chill in the fridge for 1 hour. 7. Scoop chilled batter to a lined muffin pan. 8. Top with more chocolate chips. 9. Bake in a preheated oven at 205℃ or 400℉ for 5 minutes then lower the temperature to 180℃...
