Follow me on Instagram: @intyrehealing Pumpkin Pie Waffles Recipe: Ingredients: - 3/4 cup gluten-free flour (Bob&Red Mill recommended) - 1/2 cup buttermilk (or plant-based milk for vegan option) - 1/2 tsp baking powder - 1/4 tsp salt - 1/4 tsp cinnamon - 1/2 tsp pumpkin spice - 1 cup pumpkin puree - 2 tsp sucanat (or preferred sweetener) - 1/2 tsp vanilla extract - 1/2 tsp almond extract - 1 egg (or flax egg for vegan option) - 2 tbsp butter (melted, or coconut oil for vegan option) Instructions: 1. In a mixing bowl, combine the gluten-free flour, baking powder, salt, cinnamon, and pumpkin spice. 2. In a separate bowl, whisk together the buttermilk (or plant-based milk), pumpkin puree, sucanat, vanilla extract, almond extract, egg (or flax egg), and melted butter (or coconut oil for vegan option). 3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix. 4. Preheat your waffle iron according to its instructions. 5. Pour the batter onto the preheated waffle iron, using the recommended amount for your waffle iron size. 6. Close the waffle iron and cook until golden brown and crispy. 7.
