CHEEKY CHOCOLATE PROFITEROLES Chocolate Profiteroles are a delightfully simple and cheeky dessert. They include cream puffs, filled with vanilla ice cream and topped with warm chocolate sauce. Growing up in Paris, when my aunt would to come to visit, we would go to the Bistro and enjoy seafood and these delicious treats for dessert. I hope you enjoy them too! -------------------------------------------------------------------------- INGREDIENTS For the batter: 100 ml of water 100 ml of whole milk 1 stick of unsalted butter 12 grams sugar 1 pinch of salt 150 grams of flour 4 whole eggs A couple of scoops of vanilla ice cream (For putting inside the choux once baked)** For the chocolate sauce: 270 grams of heavy whipping cream 290 grams of bittersweet chocolate 60 grams unsalted butter, at room temperature -------------------------------------------------------------------------- INSTRUCTIONS For the batter: In a sauce pan bring the water, milk, butter, sugar and salt to a boil. Add the flour to the liquid mix and stir the batter consistently with a wooden spoon to dry it. Transfer the batter into the bowl of a kitchen aid and start adding one egg at the time, making sure the egg is completely incorporated before adding the next one. When the batter is smooth and shiny, transfer it in to a piping bag and pipe it into the desired shape (eclairs, choux, etc…) on a parchment lined baking sheet.
