Ingredients: - 2 egg whites (~77g) - 130g icing sugar (or known as powdered sugar) - 95g almond meal - 1 teaspoon green tea powder - 10g sugar (to add to meringue) For ganache filling: - 50g unsalted butter - 1 egg yolk - 10g sugar - 25mL water - 1 teaspoon green tea powder Recipe: 1. Trace circle onto a paper which will become the template. Place the paper on baking tray and baking sheet over it 2. Separate egg white and yolk 3. Combine icing sugar, almond meal and green tea powder in one bowl 4. Sift two to three times until it is lump free 5. Beat egg white until stiff meringue forms. Add sugar halfway through 6. Fold meringue gently into dry mixture. *Make sure not to over mix 7. Prepare piping bag. Pour batter into piping bag 8. Pipe batter onto baking sheet 9. Remove the paper 10. Tap the baking tray and remove extra bubbles 11. Rest the batter for 1-2hours until the surface is completely dry 12. Preheat the over at 180℃. Just before you bake drop it to 130℃ 13. Bake at 130℃ for 14minutes 14. Once baked set it aside and cool it completely 15. Meanwhile, make filling. Combine unsalted butter and egg yolk 16. In a pan place sugar and water and heat it up until syrup forms 17. Add syrup to butter and egg yolk mixture. Combine well 18. Add green tea powder and combine well 19. Gently remove the macaron shells from the baking sheet 20. Spread the green tea filling onto the macron and place another shell on top 21. Repeat for all shells 22. Ready...
