Panettone (easy to make yeast recipe). Complexity level I (Enthusiast). (Level I - Enthusiast, Level II - Pre-Pro, Level III - Pro, Level IV - Bread Artist). Ingredients: • 200ml of warm milk • 430-450g of wheat bread flour (12.7% protein) • 5 large egg yolks • 160g of sugar • 90g of soft room temperature butter • 8g of active dry yeast (or 25g fresh yeast) • 1/4 tsp of salt • 100g of dark raisins • 60g of gold raisins • 40g of dried apricot • Orange zest from 1 orange • 1tsp of vanilla extract Instructions: 1. Dissolve 1 tbsp of sugar in warm milk. 2. Add yeasts and stir briefly. 3. Add 100 grams of flour from the total amount and stir. Cover the mixing bowl and place the leaven in a warm spot at 24-28°C (75-82°F) for 15-20 minutes, or until the leaven has doubled in size. You can use an oven with the "Proof" setting or simply keep it in the oven with the light on. 4. In a separate bowl, whip the egg yolks with salt and sugar. 5. Combine the egg mixture with the leaven. 6. Add vanilla extract. 7. Gradually add flour, adjusting the amount as needed. The exact amount may vary. 8. Add soft butter into the dough and mix about 7-8 mins. 9. The dough will be soft and sticky. 10. Cover the dough and let it proof in a warm place until it has doubled in size, which usually takes about 1 hour. 11. Add all the dry fruits, berries, and orange zest to the dough. 12.
