For the dough — 250 g flour — 1 egg + 1 yolk for brush the top of strudel — 100 ml warm water — 3 tbsp sunflower oil — Pinch of salt — Powered sugar For the filling — 3 sour-sweet apples — 50 g cranberries — 50 g nuts — 1 tbsp ground cinnamon — 3 tbsp brown sugar — 30 g butter In a deep bowl mix the flour (250g) and a pinch of salt. Add egg. Gradually pour water (100 ml) and add sunflower oil (2 tbsp). Knead the dough until is it smooth. Re-lay in a plastic bag and add 1 tbsp sunflower oil. Leave at room temperature for 30 min. Make the filling Fold in a bowl peeled, cored, cuted apples. Throw in cranberries (50 g), chopped nuts (50 g), sugar (3 tbsp) and cinnamon (1 tbsp). Cooled butter (30 g) cut into pieces and add to the filling and stir thoroughly. Take a linen cloth. Dust the cloth lightly with the flour. Roll out the dough. Spread the apple filling evenly onto the dough surface, leaving a 2-inch clean edge on all sides. Use the cloth to help roll the dough into a log. Grease a parchment paper with butter and transfer strudel seam-side down. Brush the top with the yolk. Bake for 20—30 min at 200°C.
