For both versions, I play the first verse, the third verse ("Through many dangers, toils and snares") and the final verse ("When we&been there ten thousand years"). Changing octaves, adding arpeggios, using a key change, and changing dynamics are all easy ways to add variety to your hymn-playing that will enhance the music behind the text.
