Low Fat Vegan No Oil Greek "Fasolakia" Stew, AKA String Bean Stew

This meal takes about 45 to 60 min to cook. Prep time is the longest it is a lot of food for a little effort. No oil makes it light and healthy. The flavors are amazing. If you do not have fresh beans you can use the frozen ones. I have used those when I am in a pinch. You can use any potato except russet. Those do not work with this meal. You can also add some eggplant. My kids do not like it so I did not add it. Best of luck!! Ingredients, String beans as many as you like! 6 potatoes (I ended up adding 2 more potatoes more) 5 carrots 1 zucchini 1/4 C finely chopped parsley 1 onion chopped 1 garlic finely minced 1 bay leaf 2 T oregano 1/2 t pepper salt it if you want to I did not. But I do add salt when I am eating it. 1 pkg or can of chopped tomatoes in juices I use POMI water (as much as you like) I added 2.5 cups of water to my stew. Bread for dippy doo!!
