Broccoli Rabe (Makes 6 servings) Ingredients: 2 bunches of broccoli rabe 4 to 5 cloves of garlic Olive oil to sauté Salt to taste Crushed red pepper to taste Directions: Cut off hard stems on the bottom of the broccoli rabe. Wash the broccoli rabe well. Sauté garlic cloves in olive oil. Add the broccoli rabe once the garlic is aromatic. Add salt and crushed pepper to taste. Cover and steam the broccoli rabe on medium-high heat until the broccoli rabe starts to cook down. Stir occasionally until tender, uncover and reduce some of the liquid. Finish by drizzling olive oil when off heat. Serve with Italian bread.
