Fish egg roll recipe of Mimi Wee is good for the Lenten season. Mimi is fasting which is no eating of red meat. Ingredients: 2 lbs fish fillet 1/2 tsp salt 1/2 tsp ground black pepper lemon juice and slices 1. Bake the fish for 10 - 15 minutes under 375F then set aside. 1 cup grated carrots 1/2 cup copped celery 1/2 cup diced onions 1 tsp salt 1/2 tsp ground black pepper 1 egg 1 cup of oil for cooking 1. Mix all the ingredients and baked fixed. 2. Prepare the egg wrapper and beaten egg as a sealer. 3. Scoop a spoon of the fish mixture and form a line, cover and roll then seal with egg. 4.
