When it comes to comfort food, these Pork Chops in Tomato Gravy are way up on my list of favorites. I love good creamy dishes and I absolutely love gravy, there¬hing better than sopping up gravy with warm tortillas on a hungry day, and that&what exactly what these are. This dish takes a few ingredients and is very easy to make, and the best part is that it&quick and inexpensive, and you can&beat that. You cab serve it with your favorite side dish like mashed potatoes, buttered noodles or Mexican rice and beans and it&all be good. I hope you give this recipe a try. ❤️ Fry till all red is gone from bone or internal temperature is 145° INGREDIENTS ____________________ 4 -1/2 inch bone in Pork Chops 2 1/2 Tbls oil (drain off later) 3 Large Roma Tomatoes (small dice) 1 Serrano pepper (optional) 1/2 Small Green Bell Pepper (strips) 1/3 Small Yellow onion (julienned) 2 green Onions (green part included) 1/2 tsp Whole cumin (or ground) 1/2 tsp Peppercorns 2 Large Garlic Cloves 1/2 C. water for molcajete 1/2 tsp Mexican Oregano (optional) 1 Small Bay leaf 1 1/2 Tbls All purpose flour Pepper as needed Salt as needed 1 1/4 C.
