The Secret recipe of Dal makhani (Restaurant style) from the Panjab region of India| Секретный рецепт королевского блюда из черного маша Ingredients 3 cups (300 grams) whole urad dal/black gram soaked overnight 1 cup (100 grams) rajma/kidney beans soaked overnight 1.2 litter of water for pressure cooking 2-3 tbsp (20 grams) butter 1 teaspoon cumin seeds 5 cloves 1 black cardamom 3 green cardamoms 1 inch cinnamon 1 Indian bay leaf/tej patta 1 medium sized onion finely chopped 1 to 2 green chillies chopped 6 to 7 garlic cloves + 1 inch ginger – crushed to a paste 3 tomatoes pureed or 2 cups of tomato puree 1/2 teaspoon turmeric powder/haldi 1/4 teaspoon ground nutmeg powder 1.5 teaspoon coriander powder 1/2 teaspoon red chili powder or paprika 4 tablespoons of fresh cream 1 teaspoon crushed kasuri methi/fenugreek leaves 1 teaspoon garam masala salt and water as required For smoky Restaurant/Dhaba style 1 small piece of charcoal 1/2 tbsp of any oil Or you can use smoked paprika instead and skip using the charcoal For Garnishing 3 tablespoons chopped coriander leaves 1tablespoon fresh cream 1 inch ginger julienne Share this recipe with your dear ones and enjoy it!
